The fruit was selected from vineyards in South Australia with the majority coming from the renowned Adelaide Hills. All fruit was harvested in the cool of night. The juice was fermented at cool temperatures to preserve the primary fruit characters. After fermentation the wine was clarified, blended and stabilized.
