Spinifex Miette Mataro in any six

Mataro, aka Mourvèdre, has to be the most underrated black grape that grows on the Australian shores: it can be a tricky. The fermentations were carried out with indigenous yeast in small open fermenters prior to gentle pressing and maturation on light lees. All the components were matured exclusively in large, old French oak barrels (predominantly 500L puncheons) to retain fruit freshness and preserve the delicate savoury aromatics that are the signature of Mataro, and stayed on light lees prior to blending and further maturation in tank prior to bottling.
