Banks Botanicals is an Australian non-alcoholic drinks brand based in Victorias Yarra Valley, created around native Australian botanicals and a more considered approach to alcohol-free drinking. The brands philosophy is simple create drinks with enough flavour, complexity and character to stand on their own in a proper mixed serve.

Rather than trying to recreate a conventional gin, Banks has developed its own distinctive botanical profile, using native ingredients and individual distillation to capture the character of each botanical before blending them together.

About Banks Herbarium

Banks Herbarium is the brands signature non-alcoholic botanical spirit, made with five botanicals cassia bark, lemon myrtle, lime, wattleseed and wild Tasmanian pepperberry.

Each botanical is distilled individually before the resulting distillates are blended with fresh Yarra Valley mountain water. This allows each ingredient to contribute its own character, creating a spirit that is layered rather than simply citrus-forward or sweet.

What Does Banks Herbarium Taste Like?

Herbarium has a bold, complex profile with

• Cassia for warm cinnamon-like spice
• Lemon myrtle and lime for fresh citrus lift
• Wattleseed for roasted, nutty and coffee-like depth
• Wild Tasmanian pepperberry for a lingering spicy finish

Despite being easy to use in gin-style serves, Banks Herbarium isnt technically a non-alcoholic gin. Banks contains no juniper, which is required for a drink to be classified as gin.
